South Africans know that few things bring people together like a platter of sizzling sosaties fresh from the braai. In this flavour-packed twist on a local favourite, Imana Gourmet Miso Soup is transformed into a rich caramel glaze that creates tender, succulent chicken skewers with an irresistible balance of sweetness and savoury depth.
Served alongside a fragrant peanut satay sauce, the dish draws inspiration from Southeast Asia, where satay (grilled skewers traditionally served with a creamy peanut sauce) has been enjoyed for centuries. The nutty richness of satay is the perfect partner to a sweet glaze, as the roasted peanut flavour balances the sweetness of the marinade.
Finished with toasted sesame seeds, fresh coriander and a squeeze of citrus, these skewers bring together the best of Southeast Asia and South Africa in one crowd-pleasing dish.

INGREDIENTS
Skewers
1 kg Chicken Fillets, cubed
4 Peppers, cubed to the same size of chicken cubes (mixed colour peppers optional)
Bamboo Skewers soaked
Sesame Seeds (preferably toasted for a nutty aroma)
Coriander, chopped
Miso Caramel
1 Packet IMANA Gourmet Miso Packet Soup
400 ml Cold Water
1 Garlic Clove, crushed
1 Thumbnail of fresh Ginger, crushed
45 ml Brown Sugar
Pinch of White Pepper
Optional: 2 drops Fish Sauce or 5 ml Oyster Sauce
Satay Sauce
250 ml Peanut Butter
45 ml Brown Sugar
60 ml Lemon Juice
60 ml Soy Sauce
5 ml Chilli Powder
Water or Oil, to loosen
30 ml Coriander, chopped
METHOD
Miso Caramel
In a pot, add the cold water and all ingredients.
Over a low heat, simmer until a thick glaze forms without burning.
If you choose to add extra depth of flavour, season with fish sauce once removed from the heat as the final seasoning.
Cool and set aside for the Chicken Skewers.
Skewers
Soak skewers in cold water to prevent splinters in the meat.
Cube the chicken. In a bowl, toss with oil to coat and add a pinch of salt and pepper.
Thread chicken and peppers onto skewer sticks, alternating in colours.
Brush generously with the miso caramel sauce.
Roasting time is dependant on the capacity of your oven, as ovens vary.
Mini skewers: Approximately 8 minutes (check at 6 minutes).
Large skewers: Approximately 15 minutes (check at 12 minutes).
Satay
Blend all satay ingredients in either a food processor or a blender. Dependant on the peanut butter brand, if this dip is too thick, simply add warm water and a small splash of oil until a dip consistency is formed.
Garnish and Presentation
Sprinkle skewers with toasted sesame seeds
Place satay sauce on the side
