
Sticky BBQ Whole Roast Chicken

INGREDIENTS
1.5 - 2kg whole chicken, patted dry
125ml / ½ cup honey
2 tbsp softened butter
125ml warm water
1tsp lemon juice
1 x IMANA Super-Sheba Chicken BBQ Stew Mix sachet
2 onions, peeled

METHOD
Preheat the oven to 180°C.
Remove the chicken from the fridge 30 minutes before roasting to bring it to room temperature.
In a bowl, mix the honey, softened butter, warm water, lemon juice, and IMANA Super-Sheba Chicken BBQ Stew Mix until the sauce powder is completely dissolved.
Cut one onion in half and stuff inside the chicken.
Slice the second onion into rings and place them in the bottom of an oven roasting pan.
Place the chicken on top of the onion rings. Tie the drumstick ends with string or kitchen twine and tuck the wings under the chicken.
Rub half of the sauce evenly over the chicken. Cover with foil and roast for 30 minutes.
Remove from the oven and baste the chicken with the remaining sauce, then return to the oven covered with foil.
Repeat this basting step after another 30 minutes, using the pan juices.
Remove foil, baste one last time and roast uncovered for another 30 minutes, or until the chicken is cooked through.
