Pumpkin & Lemongrass Steamed Bread

Serves: 6 as a side

INGREDIENTS


  • 4 cups cake flour

  • 1 packet of yeast

  • ½ cup sugar

  • 2 Carrots, grated

  • 1 x IMANA Gourmet Pumpkin and Lemon Grass Soup sachet

  • Butter, melted

  • 400ml warm water

METHOD

  1. In a large bowl, mix together all the dry ingredients, grated carrots, and the IMANA Gourmet Pumpkin & Lemongrass Soup sachet. Gradually add the warm water, kneading by hand as you go. Add water in small batches until the dough starts to come together (you may need to add a little extra flour if the dough is too sticky).

  2. Knead the dough for 5-10 minutes, until it starts pulling away from the sides of the bowl and forms a smooth ball. 

  3. Transfer the dough to a clean, lightly oiled bowl. Cover with plastic wrap or a clean dish towel, and leave to rise for 1 hour, or until it doubles in size.

  4. Preheat the oven to 220°C.

  5. Knock the dough down, then divide it into six muffin-sized balls and place them in a lightly oiled muffin tray (do not overfill, as the dough will continue to rise).

  6. Carefully place the muffin tray into a larger oven tray filled with boiling water (the water should reach about a quarter of the way up the muffin tray). Set it on the stove over high heat and cover both trays tightly with foil.
