
Festive Prawn Cocktail With Seafood Sauce

Serves: 6 as a starter

INGREDIENTS
Prawn Cocktail:
1kg cooked deshelled prawns
Crispy lettuce like cos or crunchita, washed and separated into individual leaves
1 avocado, cubed
1 cucumber
1 radish, thinly sliced
Lemon slices
Microherbs to garnish
Seafood Sauce:
125ml / ½ a cup of mayo
2 tbsp Ketchup
2 tbsp IMANA Gourmet Fiery Chilli Tomato Packet Soup sachet, or more, to taste
1-2 tsp Worcestershire sauce
1 tsp fresh lemon juice if desired
DAY 01
METHOD
On a round plate, assemble the lettuce leaves first, laying them down to border the plate in a wreath formation.
Add the avocado cubes and radish slices.
Using a peeler, slice the cucumber thinly lengthways into ribbons.
Roll up the cucumber ribbons to create decorative curled rolls.
Add the prawns around the plate, and insert the cucumber rolls between them, decorating with the curled cucumber ribbons.
Garnish with lemon slices and microherbs.
For the sauce, mix all the ingredients thoroughly, until the IMANA Gourmet Fiery Chilli Tomato Packet Soup powder is dissolved.
Serve the sauce in a bowl placed at the centre of the prawn wreath arrangement.
