
Decorative Green Parsley Mash
A vibrant twist on classic mashed potatoes, this Green Parsley Mash brings a fresh, herby flavour to the table. Serves: 4 - 6 as a side

INGREDIENTS
1 - 1.5kg potatoes, peeled and roughly quartered
40g (or approximately two packets) fresh flat-leaf parsley, very finely chopped
2 x IMANA Garlic & Herb Stock Cubes
125ml Full Cream Milk
50g Butter

METHOD
Add the potatoes to a large pot and fill with enough water to cover them by about 2 cm.
Bring to a boil over high heat. Crumble one IMANA Garlic & Herb Stock Cube into the boiling water.
Reduce to medium heat and cook at a high simmer until the potatoes are fork-tender, for about 10 to 12 minutes.
In a separate saucepan, gently heat the milk over low heat. Add the second IMANA Garlic & Herb Stock Cube to the milk, and stir until dissolved. Remove from the heat.
Once the potatoes are cooked, drain in a colander, and return to the pot. Add the warmed milk and the butter, then mash into a puree until smooth.
Add the finely chopped parsley and mix until well combined.
Festive presentation tip:
Line a Christmas tree-shaped cake tin with plastic wrap and pack the mash tightly into the mould. To serve, invert the mould onto a board, lift off the tin, and remove the plastic wrap. Garnish with festive touches like pomegranate seeds or baby tomatoes to resemble decorations.
