These Crispy Crushed Baby Potatoes are golden, crunchy, and packed with flavour, making them the perfect side for any meal. Boiled until tender, then gently smashed and roasted with IMANA Chicken Noodle Packet Soup seasoning, they develop a crisp exterior while staying soft and fluffy inside. Easy to make yet impressive on the plate, they’re a guaranteed crowd-pleaser for weeknight dinners or festive gatherings.

Serves: 4 as a side

INGREDIENTS
1kg baby potatoes
2 x IMANA Chicken Noodle Packet Soup sachets
125ml Cooking oil
Pepper, to taste
Fresh thyme, for garnish

METHOD
Preheat the oven to 240°C with the grill on.
Add the potatoes to a large pot and fill with enough water to cover by about 2 cm. Crumble one IMANA Chicken Noodle Packet Soup sachet into the water.
Bring to a boil over high heat and cook until the potatoes are fork-tender, about 15 - 20 minutes.
Drain the potatoes and allow them to cool.
While the potatoes are cooling, place a roasting pan in the oven to preheat.
Once the potatoes have cooled, carefully remove the roasting pan from the oven and add the cooking oil.
Place the potatoes in the pan, spaced out, and gently press down on each potato using a cup to create a crushed effect.
Brush the potatoes with oil, sprinkle over the contents of the second IMANA Chicken Noodle Packet Soup sachet, and add some crushed black pepper.
Place under the grill and cook until golden, crispy, and heated through, approximately 5 minutes.
Serve sprinkled with fresh thyme.
