Serves: 6 as a side

INGREDIENTS
500g butternut cubes
50g / 1 wheel or square of feta
1x IMANA Caramelised Onion & Balsamic Gravy sachet
500g roll defrosted phyllo dough
1 egg, beaten
Black sesame seeds or poppy seeds
Fresh thyme and rosemary, to decorate
DAY 11
METHOD
Preheat the oven to 220°C.
Line a roasting pan with baking paper and add butternut cubes to the pan, spacing them out.
Roast butternut until soft, for about 20 minutes.
Once roasted, remove from the oven and place in a mixing bowl.
Mash the butternut.
Add the IMANA Caramelised Onion & Balsamic Gravy sachet and crumble in the feta, stir until evenly mixed.
Unroll phyllo pastry. Using two sheets at a time, cut into squares approximately the size of a side plate (around 15 cm × 15 cm).
Place about 2 tablespoons of the butternut filling onto each pastry square, positioning it roughly 1 tablespoon away from the edge and centred. Gently roll the pastry to form a cracker shape, then twist the ends firmly - but carefully - to avoid tearing.
Brush the parcels with the beaten egg and sprinkle the seeds on top.
Place the parcels in a lined roasting pan and bake for 15 minutes, or until golden brown and crispy.
Serve garnished with thyme and rosemary, knotted around the twisted ends of the wrappers for a festive look.
