Bolognese sauce takes its name from Bologna, a city in northern Italy where slow-cooked meat sauces have been part of the local culinary tradition for generations. Traditionally served with pasta, this much-loved sauce has inspired countless variations around the world. Our comforting chicken casserole captures those rich, savoury flavours, combining tender chicken, tomatoes, peppers and olives in a delicious one-pot twist on the classic.

INGREDIENTS
1 Tbsp Olive Oil
1kg Chicken Pieces, thighs or drumsticks
1 Onion, sliced
2 Cloves Garlic, crushed
1 Red Pepper, sliced
1 tsp Smoked Paprika
1 Cup Chopped Tomatoes or 1 small tin, drain slightly
8 - 10 Baby Potatoes, halved
½ Cup Green Olives, pitted
1 Cup Chicken Stock or Water
1 IMANA Spaghetti Bolognaise Flavoured Cook-in-Sauce Sachet
Salt and Black Pepper, to taste
Fresh Parsley, chopped, to serve
METHOD
Heat the olive oil in a wide casserole dish or pot. Brown the chicken pieces well on all sides, then remove and set aside.
In the same pot, sauté the onion, garlic and red pepper until soft and fragrant.
Stir in the smoked paprika and cook for 1 minute.
Add the chopped tomatoes, baby potatoes and olives, then return the chicken to the pot.
Add 1 cup of chicken stock or water and stir in the IMANA Spaghetti Bolognaise Flavoured Cook-in-Sauce. Stir gently to combine.
Cover and simmer on a low heat for 30 - 35 minutes, or until the chicken is tender, the potatoes are cooked through and the sauce is rich and thick.
Season to taste and finish with fresh parsley.
Best served with crusty bread, rice or simply as is.
